Title: Ripe Tomato Relish

Yield: 1 Batch

VEGETABLE MIXTURE
1gaRipe tomatoes; chopped
1gaCabbage; chopped
1qtOnions; chopped
6 Hot green chile peppers
6 Sweet red peppers
1cSalt
BRINE MIXTURE
3lbSugar
2tbPowdered mustard
2tbGinger
2tbTurmeric
1/2gaVinegar
2tbCelery seed
2tbCloves
2tbCinnamon

Mix vegetable ingredients (including salt). Place in a colander and let drip for 3 hours.

Place brine ingredients on the stove and bring to a boil. Add vegetables and boil for 10 minutes. Pack in hot sterilized jars and seal.
